Literally translated to 'cooked wine', this traditional Italian condiment is made by the slow cooking and reduction of 100% Australian Shiraz grape juice and red wine vinegar over many hours. Can be used to dress salads, season roasted vegetables, meats and fruits or to deglaze a pan after cooking.
